PURPOSE

To blend supervision and physical labor at 30% to 70% thereby arriving at the highest production, and gaining respect of subordinates. To keep a clean, safe, sanitary and organized work area at all times.

ESSENTIAL FUNCTIONS

Supervise the Utility staff of the hotel and ensure policies and procedures are followed.

Supervise the cleaning of all equipment (china, glass and silver) and ensure adequate supplies of each. Conduct quarterly inventories.

Complete weekly associate schedule and evaluate and maintain weekly Labor Costs Sheets.

Work with Banquet Stewards to ensure proper breakdown stations and to make sure stations are established according to the size of the group.

Maintain all kitchen storage areas.

Conduct a monthly walk-through with Engineering and forward minutes to the Executive Chef and Director of FandBfor follow-up.

Assume responsibility and manage to budget kitchen controllable costs on china, glass and silver.

Lead the Food and Beverage sanitation effort by interacting with vendors, associates and the health department.

Maintain clean and orderly work areas following PCHs SOPs.

Breakdown, clean and store all dishes following correct procedures.

Utilize the Hotel Rack and Stock Procedures for sorting china, glass, and silverware

Inspect dish machine for cleanliness, proper distribution of soap, water and rinse solution. Clean dish machine as needed and totally break-down machine at close of business.

Distribute all stored glass, silver and china to designated areas.

Handle the stocked china, glass and pre-soaked silverware correctly to avoid breakage while running it through the dish machine.

Follow the railroad cleaning schedules for sanitation duties.

Utilize the silver de-tarnishing equipment as business requires.

Ensure garbage collection on a timely basis with cans being hosed out and liners are being used.

Ensure floors are mopped and swept.

Maintain cleanliness of back dock areas.

Strive to maintain a pleasant working atmosphere with all kitchen and fellow associates; develop/promote team spirit.

Enforce safe work habits in utility/dish room areas.

Comply with the "Clean As You Go" work policy.

Attend all Associate meetings.

Assist in training and supervising utility staff. Enforce strict compliance with dress codes and uniform policies.

Ensure that all proper cleaning supplies are available and assign crews to prospective work areas.

Coordinate with Banquet Captain for items needed for use in banquet meal functions.

Assign specific cleaning assignments for all personnel, utilizing a daily cleaning schedule.

Conduct monthly meetings with agenda and written records.

Maintain aisle in neat and orderly fashion at all times. Make sure all items necessary for service are maintained at par level.

Each Associate is expected to carry out all reasonable requests by management which the Associate is capable of performing.
