Overview The Aggie Chocolate Factory, Research, and Learning Center (ACF) within the College of Agriculture and Applied Sciences at Utah State University is a small-scale craft manufacturer of bean-to-bar chocolate specializing in high quality single origin products. As a manufacturer it is essential that the factory operate efficiently and safely as a business, research, and center of education and learning. To accomplish this, the facility must comply with industry best practice standards of operation and management. The ACF has an opening for a full-time position for a Food Processing Technician. The Food Processing Technician will be primarily responsible for producing chocolate products at the factory and for scheduling and overseeing part-time employees, however as a new, small business the technician will fulfill other responsibilities as required. The position reports directly to the Manager of the ACF.

Responsibilities

  • Develop a complete knowledge of the production process (bean sorting, roasting, winnowing, grinding, conching, tempering, molding, cocoa liquor pressing)
  • Perform the complete production process
  • Optimize efficiency of the production processes
  • Assist with development of new products
  • Process order payments
  • Prepare and serve drinks and other chocolate treats
  • Maintain a clean work environment by sweeping floors, wiping off counters and machines, etc.
  • Open/close facility as needed at beginning and ending of shifts
  • Organize, run, and assist execution of special events such as taste tastings, tours, and deliveries around campus
  • Perform clerical tasks such as answering phone calls, etc.
  • Sort and prepare cocoa beans for roasting
  • Wash dishes and utensils used for preparation of caf and production items
  • Maintain up-to-date, accurate production logs, reports, and summaries
  • Help create and maintain detailed written Standard Operating Procedures for all production processes
  • Participate and contribute to ACF meetings as needed
  • Misc duties as assigned

Qualifications Minimum Qualifications:

  • Experience working in an industrial food manufacturing business
  • Knowledge of quality assurance and quality control for food manufacturing Preferred Qualifications:

  • Bachelor's degree in Food Science, Chemistry, Biology, Physics, or Engineering

  • Experience working in a bean-to-bar chocolate manufacturing facility Knowledge, Skills, and Abilities:

  • Ability to think logically, critically, solve problems, and implement solutions

  • Ability to prioritize and adapt as necessary to changing circumstances
  • Personal computer skills including but not limited to Microsoft Excel and Word
  • Ability to work independently and with teams
