Description of Work Unit

The mission of the Lory Student Center ( LSC ) is to serve as a student-centered organization at the heart of campus, providing programs and services that create an inclusive community and inspire active, engaged learning. As an auxiliary enterprise within the Division of Student Affairs, the Lory Student Center is a comprehensive student union recognized nationally as one of the leading university centers. The LSC annual operating budget is approximately $40 million. Nearly 125 full-time career staff and 650 student and hourly staff serve approximately 24,000 people entering the facility on a daily basis and hosts approximately 13,000 annual events and meetings.

Areas within the Lory Student Center include the CSU Bookstore; Campus Activities; Marketing; Operations; Student Leadership Involvement & Community Engagement (SLiCE); an extensive array of business and service partners; and Lory Dining Services.

Lory Dining Services is a hybrid auxiliary department consisting of an innovative blend of contracted and self-operated retail dining units in the Lory Student Center and across the University. The self-operated retail dining units include one convenience store in the LSC and one convenience store at the Lake Street Parking garage, and five coffee shops across campus, with two of them being in the LSC . In addition, there are three quick-service restaurants, a full service dining restaurant, catering department, a pub and a microbrewery in the department, all located in the LSC .

Lory Dining Services exists to sell a variety of food and beverages, in a safe and sanitary environment and for the best possible value, to a diverse customer base at Colorado State University.

Position Summary

A signing bonus of up to $2000.00 may be considered for successful candidates.

This position exists to provide Lory Dining Services with the ability and leadership to be dynamic in the development of emerging trends in both coffee and convenience items that meet the needs of the campus community. Duties include compliance with Environmental Health Services and state of Colorado rules and regulations, development and implementation of new menu items and updating standard operating procedures. Position has responsibilities and oversight over a combined revenue budget of $2.9 million. Position also has oversight of student staff, inventory management, sustainability efforts and develops training and development regimen in new and existing coffee shops & convenience stores and ensures excellent product quality and customer service through effective staff training. DEIJ initiatives are threaded into everything done and student success is the beacon that drives department staff. The department model consists of CSU students managing and staffed in each operation.

Required Job Qualifications

  • Possess a degree from an accredited college, university, academic or culinary institution with preference for a major or minor emphasizing business, hospitality management, management or related field.

  • Possess three years (36 months) of progressive full-time supervision experience in the retail or hospitality industry.

Preferred Job Qualifications

  • Strong financial acumen and analytical skills in budget development and fiscal management, including experience in taking corrective action in response to high expense margins and/or under-performing operations.

  • Product and/or service marketing experience preferably to include product or brand awareness campaigns.

  • Demonstrated commitment to customer service.

  • Experience working with inventory management software (i.e . CBORD , Cheftec, Yellow Dog, Food Pro, etc.)

  • Demonstrates work experience with a food safety program ( HACCP , ServSafe or other comparable food safety program).

  • Experience with sustainability initiatives such as composting programs, energy and waste reduction efforts, and behavior change campaigns.

  • 2 years’ experience working in a retail setting such as a convenience store or similar.

  • 2 years’ experience working as a barista in a coffee shop.

  • Demonstrated experience developing, implementing, and/or supporting programs and services related to diversity, inclusion, and social justice.

Duty/Responsibility

  • Supervise, train, and evaluate 7 student managers.

  • Oversee the hiring, onboarding, training, and supervision of 100 student staff working in coffee shops and convenience stores.

  • Review standard operating procedures regularly and implement new flow and production models to increase productivity and efficiency with adherence to all Environmental Health Services guidelines and policies.

  • Create and execute structured training programs for student managers and staff revolving around customer service, food safety, and product quality. Identify and support an environment for personal and professional growth. Meet together with Assistant Director and student managers regularly.

  • Coordinate, design and/or deliver opportunities to increase staff morale; create and maintain an inclusive and welcoming work environment where all employees’ multiple and intersecting identities are valued and recognized; build employee relationships and facilitate conflict resolution.

  • Serve as a mentor and role model to direct and indirect reports in relation to performance expectations, professional development, and supervision development/leadership.

  • Provide feedback regularly and conduct performance evaluations for direct reports. Ensure indirect reports are receiving the same experience in all areas.

  • Actively participate and seek out professional development opportunities to enhance value to the dining operations and LSC . Take courses and pursue certifications around industry trends, supervision and self-development in order to become more aware of the challenges students have and a valuable resource for student staff.

  • Contribute to the LSC SHAPE Training & Talent Development program by supporting staff training planning and execution, program attendance, and committee membership to further support the mission and purpose of the LSC .

  • Responsible for writing seven budgets for retail dining operations that net $2.9 million in annual sales, and operating within set budget parameters.

  • Help maintain the department’s Yellow Dog inventory management system and its applications for inventory management, cost analysis, product movement, purchasing, transfers and other fiscal control measures.

  • Develop ordering par levels for student leadership to follow during different points of time during the calendar year (different needs).

  • Responsible for some invoice entry and merchandising variety of products at convenience store locations.

  • Responsible for oversight of vendor agreements and compliance.

  • Collaborate with LSC Marketing in order to create product and/or brand awareness, develop campaigns, design, advertise, promote etc. in order to drive sales or showcase a product/brand.

  • Ensure an evolving, exciting, and responsive set of experiences for the campus community through the products and services we offer.

  • Determine promotions for each dining operation and the digital or printed means to communicate promotion to customers.

  • Segment the different markets dining operations serve across campus and target these markets with appropriate product mix and pricing.

  • Utilize qualitative market research methods to stay ahead of product trends, to leverage technology and determine fads from products that have staying power.

  • Update and continuously modernize position descriptions for entry level student positions and internal leadership positions to acquire the best talent and retain. Explore and execute creative ways to market open positions.

  • Use menu engineering to draw attention to high margin and new offerings on menus in retail locations. Work with student staff to identify efficient solutions and opportunities on point-of-sale system to upsell and further bring awareness of our offerings to customers.
